BBQ Thai Tofu Skewers with Spicy Thai Dressing

INGREDIENTS

400g firm tofu, sliced into approximately 3 cm cubes

½ cup Peko Peko Thai Chilli Garlic Sauce, as a marinade

12 kaffir lime leaves

Olive oil 

TO SERVE

½ cup Peko Peko Thai Chilli Garlic Sauce

½ cup salted peanuts, finely chopped

Fresh mint, shredded

1 punnet quirks, halved

Lime wedges

TO PREPARE

  1. Marinate tofu in Peko Peko Thai Chilli Garlic Sauce for 30 minutes (or overnight).
  2. Meanwhile, soak bamboo skewers in water for 10 minutes before using to prevent burning. Thread three pieces tofu onto each skewer interspersed with kaffir lime leaves. 
  3. Pre-heat BBQ or frying pan to hot, drizzle oil, then grill tofu on each side for 2 minutes or until golden. Repeat with remaining skewers
  4. Serve to guests on a platter along with additional Peko Peko Spicy Thai Sauce, chopped peanuts, mint and lime wedges. 

COOKS NOTES

  • Make this a full meal by serving with rice or noodles.
  • Replace tofu with chicken, and adjust cooking time to 10 – 12 minutes
