Avocado and Edamame Dip with Soy Sesame Dressing

INGREDIENTS
Dip
1 avocados
1 cup podded edamame beans, blanched
1 small clove garlic, crushed
4 Tbsp Peko Peko Soy Sesame Dressing (or to taste)
½ tsp sea salt
1 lemon, juiced (or to taste)
TO SERVE
Spring onions, finely sliced
Togarashi spice
Japanese brown rice crackers
Lemon wedges
TO PREPARE
- Place the dip ingredients in a food processor (or use a hand held blender) and process until well combined and roughly blended. Finish mixing by hand to keep texture in the dip. Adjust seasoning with Peko Peko Soy Sesame Dressing and lemon juice.
- Spoon the mixture into a serving bowl and top with spring onion, Togarashi spice and extra salt. Serve with rice crackers and lemon wedges.
