Beef Tataki With Yuzu & Soy Dressing

INGREDIENTS

BEEF

800g beef tenderloin

2 tablespoon vegetable oil 

salt and pepper to taste

DRESSING

• 1⁄2 cup Peko Peko Yuzu Dressing

• 2 cloves garlic, minced

• 2 Tbsp fresh ginger, minced

SALAD

• 1 Lebanese cucumber, thinly sliced into rounds

• 3 radish, thinly sliced into rounds

• 1 spring onion, thinly sliced

• Sesame seeds to garnish

• Micro herbs – optional

TO PREPARE

1. Season the beef with salt and pepper and allow to sit until it reaches room temperature

2. Heat the vegetable oil in a large skillet or frying pan over high heat.

3. Add the beef to the hot skillet and sear it quickly on all sides, about 1-2 minutes per side. The inside should remain rare.

4. Remove the beef from the skillet and immediately place on a plate to rest and cool.

5. Wrap the beef tightly in plastic wrap and refrigerate for at least 1 hour. This makes it easier to slice thinly

6. To prepare the sauce, simply stir the garlic and ginger through our Peko Peko Yuzu Dressing.

7. Remove the beef from the refrigerator and unwrap it.

8. Using a sharp knife, slice the beef thinly against the grain approximately 5mm.

9. Arrange the beef slices on a serving platter.

10.Add the cucumber and radish, tucking some in between the beef and leaving a scatter across the top.

11. Dress the beef with the dressing and scatter with sesame, spring onion and micro herbs.

12. Serve immediately
